“I Forgot to Eat My Baby Carrots” Soup

I always buy baby carrots with an overly ambitious hope that I eat them during the work week. I tend to forget that I bought them and then left with a bag of carrots about to go bad.
I was racking my brain about what to make with my carrots because I hate being wasteful. I have been into soups lately since they are a good way to get in some veggies and protein that fills you up but low in calories. Why not try carrot soup?


I was pleasantly surprised at how easily I whipped up this yummy nutrition packed soup with ingredients I already had in my kitchen.You don’t need fancy equipment either. I threw everything in my Nutri Bullet blender, but you could use a food processor or immersion blender. I also used bone broth, which is high in collagen. Collagen is great for your hair, skin and joints to help make them stronger. The added protein will make you feel full and satisfied as well. I started using Bare Bones bone broth because they come in packets that are easier to throw in my bag for extra protein throughout the day.

Ingredients:
– 200 grams of baby carrots (for one serving, about half the bag)
– 3/4 cup of bone broth
– 1 tbs of heavy cream
– 1 tsp of garlic powder
Salt and pepper to taste


Directions:
1. Boil carrots until soft (took about 15 to 20 minutes)
2. Add carrots, bone broth, garlic powder, salt/pepper to blender or food processor and blend
3. Add heavy cream (you can use another type of creamy liquid such as milk or coconut milk) and blend until smooth

Nutritional breakdown: Roughly 200 calories with 10 grams of protein.

You can play around with the recipe by adding different spices based on your preferences. I added some fresh rosemary for a savory flavor. I will try some red pepper flakes on my next batch for a bit of spice. Or try adding some roasted pumpkin seeds sprinkled on top.

This soup is nutrition packed, super easy to make and required very little kitchen cleanup. It’s only 200 calories and about $2 per serving to make. Enjoy!
